About the Author
Diana Henry has won numerous awards for her journalism and books and is the food columnist for The Sunday Telegraph. A Bird in the Hand received a 2016 James Beard Award , and A Change of Appetite, voted Cookbook of the Year by the Guild of Food Writers in 2015, was a James Beard Award nominee. Diana was named "Cookery Writer of the Year" by The Guild of Food Writers in 2009 and in 2007 for her column in the Sunday Telegraph's Stella magazine. She is a contributor to many magazines including Eating Well, Red, House and Garden, Country Living and Waitrose Food Illustrated. Diana has written nine other books including Crazy Water Pickled Lemons, Cook Simple, Salt Sugar Smoke, and Roast Figs Sugar Snow. Her new book, Simple, publishes in September 2016. Diana lives in London with her partner and children.

Inspirational

I love this book! Like Diana, I enjoy trying new and unusual ingredients, as well as different flavor combinations. With today's access to just about any ingredient online, I don't even need to leave the house to purchase some of these items. I also enjoy spending time in the kitchen, preparing new and exciting dishes (although I am a full time professional)!
Frankly, I was a bit surprised by a previous comment, and thought it was unfair. "Simple" is not necessarily interpreted the same way by everyone. I find this book's title appropriate in that MOST of the ingredients are "simple". They are simply transformed into something extraordinary. I also think that most people, like myself, who buy cookbooks, do not do so because they are looking for a recipe for "fried bream with a squeeze of lemon".

Big flavors, yes; simple and effortless, no

The reviews of this book and articles about the author tout Henry's passion, obsession really, with developing recipes. Out of her "laboratory" and extensive pantry fly creations that seem intended to shock eaters out of their mundane appetite for uncomplicated, familiar food. "Effortless" does not come to mind with such alchemy because if you happen not to have a stock of casarecce, cavalo nero, 'nduja, or even pea shoots or black venus rice, etc., you need to go shopping or go online, or both. I guess from an alchemical gastronomical perspective, why settle for a simple pan-fried or baked bream filet with a twist of lemon and sprinkle of chopped parsley when you can pimp it up with walnuts, pomegranate seeds, red chile, honey, and pomegranate molasses. And why accompany your fish with simple creamy coleslaw when you can transform (or disguise) your shredded cabbage with baby spinach, apples, red onion, walnuts, caraway seeds, and blackberries. While the book's title, to me, is not appropriate, this book does remind busy people needing to cook their dinner that even light touches of Moroccan, Indian, Chinese, or Vietnamese ingredients and spices can make a mundane platter look and taste more interesting. For people with unlimited time for shopping, maintaining a vast pantry, and preparing a mise en place of 10-15 ingredients, it is ideal.
